Shrimp Mushroom and Tofu Soup recipe

  • 2 egg
  • 200 g tender tofu
  • 100 g white jade moshroom
  • 1 tsp black pepper
  • 1 spoon cooking wine

  • Wash the shrimps, remove the heads, shells and devein. Do not throw away the shrimp heads. You can fry them later. After cleaning the shrimps, pat them dry with a kitchen towel. Add cooking wine and freshly ground black pepper and marinate for ten minutes. If you don’t have cracked black pepper, use black pepper powder.
  • Heat the pan over low heat, and when the oil is hot, pour in the eggs. The eggs here do not need to be broken into egg liquid, just like fried eggs, but two eggs are poured into the pan together and fried. After both sides are browned, cut into pieces. It’s easier to cut with scissors.If you don’t like fried eggs, you can just scramble them.
  • Take out the eggs, lower the heat, add a little more oil, add the shrimp heads, stir-fry the red oil and remove the shrimp heads.
  • Over low heat, add shrimps and fry until both sides change color.If you don’t want to fry them, you can just boil the shrimps directly in the soup at the end.
  • Turn on medium heat, add white jade mushrooms and stir-fry for a while.If you don’t like white mushrooms, you can use white mushrooms or seafood mushrooms.
  • Add eggs, heat water to cover the ingredients, and cook over medium heat for 5 minutes.The water here can be added according to the number of people eating. How many bowls of water are poured according to the number of people.
