I have tried to wash the whole potato, add some water to it and put it in the microwave, press the “steamed sweet potato” button to cook it in the microwave, then peel off the potato skin and mash it into a paste;
I have also tried to peel it first, cut it into slices, add water and put it in a pot to cook until a chopstick can penetrate it, then take it out and mash it into a paste;
both are OK! Just cook it in your own way…
For boiled eggs, I always boil them for 4 minutes first, then turn off the heat and simmer them for 5 minutes at residual temperature. The egg yolk will not have black circles and the taste is very tender;
the egg white can be eaten together. According to personal preference, adding some small tomatoes or other fruits or raisins is also a good choice~
It is OK to eat directly or spread it on bread slices, sandwiches, etc.! As long as you like

Mashed Potato Salad with Egg Yolk
Ingredients
- 2 potato
- 1 egg
- salt moderate
- Sweet salad dressing moderate
Instructions
- Boil or steam the potatoes, or peel and slice them and cook them in a pot with the eggs
- While hot, mash the cooked potatoes and egg yolks, then add a little bit of fine salt and mix well
- Finally, add the sweet salad dressing and mix well.
