The Norwegians have a saying, “Spiser du fisk, blird uf risk,” meaning eating more fish makes you healthier. Norway’s long and narrow coastline makes it a major exporter of cod, salmon, and other fish. Every winter, large numbers of wild cod migrate to Norway’s western coastline to spawn, marking the annual fishing season. According to a recent survey, a healthy diet requires eating fish at least three times a week. Fried, grilled, and fish soup are now common dishes on Norwegian family tables. Today, I’d like to recommend one of the simplest ways to enjoy fish: pan-fried cod.

pan fried cod with mashed potatoes
According to the latest survey, a healthy diet requires eating fish at least three times a week. Fried fish, grilled fish and fish soup have become popular dishes on Norwegian family tables. Today I recommend one of the simplest ways to eat fish, which is pan fried cod.
Ingredients
- 300 g Quick-frozen cod
- potato appropriate amount
- Mini cabbage appropriate amount
- carrot appropriate amount
- salt appropriate amount
- black pepper appropriate amount
- milk appropriate amount
- 1 teaspoon butter
- cooking oil appropriate amount
Instructions
- Quick-frozen cod, take it out in advance and thaw it at room temperature
- Sprinkle with salt and freshly ground black pepper and marinate for a while
- The amount of potatoes depends on the size of the potatoes and the appetite of the person eating. Wash the potatoes and boil them with the skin on for about 20 minutes. Use a chopstick to poke it through. If it can be easily penetrated, it is cooked.
- After peeling, add butter while hot and mash into paste
- Add appropriate amount of milk and adjust the mashed potatoes to the desired consistency, but generally not to the super soft KFC kind. Add appropriate amount of salt and black pepper according to taste
- While the potatoes are cooking, remove the outer leaves and roots of the mini cabbages, wash them and cut them in half
- Prepare another small pot of lightly salted water, bring it to a boil, boil the mini cabbage for half a minute, remove and drain
- Pat the marinated cod dry with kitchen paper
- Heat the pan over high heat until smoking, then add the oil and immediately add the fish. Maintain high heat and fry for half a minute. Reduce the heat to the lowest setting and fry for 3 minutes. Then, switch back to the highest setting and fry for another half a minute. Then, flip the fish over and fry it again until cooked through. This way, the fish will be fully cooked without falling apart.
Notes
Vegetables can be replaced according to your taste. Many fast food dinners are served with carrots and mini cabbage, so I chose these two.
Just steam them until they are soft. Salt is added when the cod is marinated, and there is also salt in the mashed potatoes, so don’t add too much salt, otherwise the whole thing will be too salty
When making it, boil the potatoes first. After the potatoes are cooked, prepare the mashed potatoes while frying the fish. Also prepare the accompanying vegetables at the same time, so that all the ingredients are finished at about the same time and don’t get cold because you are waiting for one thing
