Golden Sand Mashed Potatoes

The first time I ate it was at a street-side tea restaurant in Hong Kong. The boss put the hot mashed potatoes into an iron plate, sprinkled a layer of freshly fried salted egg yolk crumbs on it, poured hot oil on it, and with a “sizzle”, the air was instantly filled with the aroma of salted egg yolk. At that moment, I realized that mashed potatoes can also have the “freshness of seafood”.

Ingredients
  

  • 2 potato
  • 4 egg
  • 1 carrot
  • 20 g Salad Dressing
  • salt moderate
  • pepper moderate

Instructions
 

  • Peel the potatoes
  • Microwave the potato slices for 15 minutes
  • Boiled eggs
  • Peel hard-boiled eggs
  • Cut in the middle
  • Eggs with the yolk removed
  • Mash potatoes, egg yolks, salad dressing, salt and pepper together and mix well with a whisk. Add a little hot water if necessary to avoid it being too dry.
  • Cut the carrots into shreds and place them on the bottom of a plate, then place the egg whites with the yolks removed.
  • Use a piping bag and piping nozzle to pipe mashed potatoes onto the egg whites
