Ingredients
- 4 potato
- shallots appropriate amount
- vegetable oil appropriate amount
- salt appropriate amount
- light soy sauce appropriate amount
Instructions
- Wash the potatoes and steam them on a steaming rack. I used a rice cooker to steam them
- Wash the shallots
- Take out the steamed potatoes, let them cool down a bit and peel them
- Heat oil in a pan
- Pour in potatoes and fry
- Use a spatula to crush the potatoes and add appropriate amount of salt to taste
- Add a spoonful of light soy sauce
- Add appropriate amount of boiling water and cover and cook for a while
- Sprinkle with chopped green onions
Notes
To steam the potatoes, you can use a rice cooker like I did, cooking the rice on the bottom while steaming them on the top. You can also use a pressure cooker and just briefly pressure cook them.
Once you remove the potatoes, you can peel them; it doesn’t matter if they’re cooked through or not. Anyway, they still need to be fried in oil.
