Today’s pancakes are made entirely from the leftover ingredients from yesterday’s mashed potatoes. Just add a little flour and you can make pancakes. Mashed potatoes with kimchi are delicious.

Ingredients
  

  • potato appropriate amount
  • kimchi appropriate amount
  • Green pepper appropriate amount
  • onion appropriate amount
  • egg appropriate amount
  • flour appropriate amount

Instructions
 

  • Steam the potatoes and mash them.
  • Dice kimchi, green peppers, and onions
  • Heat the pan and oil, add onion, kimchi and green pepper in turn, stir-fry until fragrant, then turn off the heat and set aside
  • Put eggs, mashed potatoes, salt, and flour in a bowl and mix into a moist batter (I added more mashed potatoes when I made it, so the batter can be called dough!)
  • Add the stir-fried kimchi chopped and mix well
  • Brush a thin layer of oil on the frying pan, use a spoon to slightly shape the batter and put it into the frying pan, and fry on low heat for about seven or eight minutes (turn it twice in the middle)

Notes

1. Brush a little oil on the spoon to prevent the batter from sticking.
2. Don’t flip the batter over immediately after adding it to the pan. Fry it on low heat for two or three minutes, then shake the pan slightly so that the pancake can move before flipping it over.
